Top regional products and seasonal creativity

The fine dining restaurant's cuisine combines sustainability and regionality at the highest level. Many ingredients come from the Schlosshotel's own vegetable and herb garden, while eggs from the Schlosspark chicken farm and meat from regional butchers are supplied.

The seasonally changing menu offers guests the choice between a 4-course menu for 119 euros and a 6-course menu for 159 euros. With additional small delicacies such as amuse-bouche, homemade bread with whipped butter and fine chocolates after the cheese, there are far more courses for an extensive and unforgettable dining experience.

 

Sebastian Treude - The philosophy of a creative visionary

Sebastian Treude, head chef of the fine dining restaurant DAS FREUDE, combines passion, creativity and respect for the best regional and international produce in his work. For him, fine dining is much more than the preparation of perfect dishes - it is an art form that tells stories and evokes memories.

His philosophy is based on a clear goal: to create enjoyment without boundaries in a relaxed atmosphere. This means honoring culinary traditions while breaking new ground. “Our cuisine should evoke emotions, create feel-good moments and surprise - without dogmatic rules or rigid guidelines,” says Treude.

One signature dish is “Mama's chicken fricassee 2025” - a modern interpretation of classic soul food, combined with mussels, scallops, rutabaga and a crispy chicken skin chip. Treude shows here how he combines home and world cuisine in perfect harmony.

Details such as homemade sourdough bread or the Japanese chawanmushi also reflect his love of creativity. Every plate is created with dedication - for guests who appreciate enjoyment and quality.

 

Sebastian Treude - Career

Sebastian Treude brings with him over 20 years of experience and an impressive CV that characterizes his culinary excellence and creativity.

  • Born in Siegen and a trained chef and master chef with a solid education in classic French cuisine
  • Training at Göbel's Schlosshotel and further development as a sous chef under Monsieur Jose Louis Esteves, who opened up the world of fine dining to him and had a lasting influence on him.
  • Worked in various restaurants in Germany and abroad
  • Since 2022: Head chef at Göbel's Schlosshotel Friedewald, with the vision of redefining regional and international cuisine at DAS FREUDE

Gero Lohf is not only your host, but also your guide to the world of wine. With passion and expertise, he ensures an all-round successful experience. With his expertise in fine dining and his passion for perfectly matched wine pairings, Lohf ensures that every evening at “Das Freude” is an experience for all the senses.
